Seeing as it is Britain’s Cheese week, i decided to share with you an excellent and easy cheesy recipe a dear friend of mine showed me recently. No, it is not British but non-the-less, you could make it using all British cheeses …….
What you need:
1 Pack of Filo Pastry
1 Pound of Cheese ( we used feta and cheddar as that’s waht we happened to have in the fridge at the time)
3/4 cup of whole milk
1teaspoon of peppar
1 pinch of salt
1 egg (optional)
1, First of all, make sure Filo Pastry is thoroughly defrosted.
2, Preheat oven to 180 Celsious.
3, Prepare the filling
Crumble Feta Cheese into large mixing bowl.
Mix in the other grated cheese.
Add milk, eggs and seasoning. Stir well until it become “slushy” ( similar to cottage cheese).
Cut the pastry into the right size for your baking tray.
Brush butter inside baking tray.
Put down the first layer (about 3-4 sheets) of filo pastry. Brush with melted butter.
Now alternate the layers with filling and pastry. Brush Each layer of pastry with melted butter.
When you reach the top layer. Cut it into portion size.
Bake in oven for about 30 mins or until golden brown.
Let cool for a few minutes and serve warm with a nice salad. Delicious !
